Standard Weekday Scramble

Serves: 1

Ingredients:

  • 2 eggs

  • 2 tbsp water

  • 2 tbsp grated parmesan cheese

  • 1 tbsp butter

  • 1.5 cups baby spinach

  • 1/4 avocado

  • Salt, pepper, red pepper flakes (optional)

Method:

  1. In a medium bowl, whisk the eggs with the water, parmesan, salt and pepper, until frothy. Set aside.

  2. Heat the butter in a large nonstick skillet over medium heat.

  3. Add the spinach and cook until wilted, about 2 minutes.

  4. Pour the eggs into the skillet and cook, undisturbed, until the edges are set, 30 seconds to 1 minute. Use a spatula to fold the eggs, until cooked to your liking. If desired, sprinkled with red pepper flakes.

  5. Top with sliced avocado and enjoy!
