Sweet and Sour Chicken and Veggies Sheet Pan

Makes: 4 servings

Ingredients:

  • 1 lb Chicken Breast or thighs sliced into strips

  • 2 cups Red Onion (chopped)

  • 4 cups Broccoli (cut into florets)

  • 1/2 tsp Sea Salt

  • 5 fl ozs Pineapple Juice

  • 1 Lime (juiced)

  • 1 tbsp corn starch slurry (whisk with 1 tbsp cold water until dissolved)

  • 2 tbsps Raw Honey

Method:

  • Preheat the oven to 400ºF (205ºC) and line a baking sheet with parchment paper.

  • Place the chicken, onion, and broccoli into the baking sheet. Season with salt and bake in the oven for 15 minutes.

  • Meanwhile, in a saucepan, whisk together the pineapple juice, lime juice, and honey. Add your cornstarch slurry. Place over medium-high heat. Bring to a simmer and cook for about six to seven minutes or until slightly thickened, whisk frequently.

  • Remove the sheet pan from the oven and pour the sweet and sour sauce all over the chicken and vegetables. Bake in the oven for another 15 minutes or until everything has cooked through.

  • Divide between serving plates and enjoy!

Serve with cauliflower rice or mixed greens to complete your meal!
